الأهداف العامة لدورة
رفع مستوى الأداء و العمل بالطرق الحديثة للمراقبين الصحيين العاملين في مجال الغذاء .
التعرف على الحديث في مجالات الرقابة على الغذاء مع التأكيد على الدور الأساسي لها.
خلق الوعي التطبيقي لتحديث القوانين و اللوائح القانونية للتفتيش و الرقابة على الغذاء مع القدرة على اختيار المناسب منها لكل دولة حسب القوانين المتاحة .
التعرف على مصادر تلوث الغذاء ( بيولوجي – طبيعي – كيميائي).
التعريف بمفهوم نظام تحليل مصادر الخطر و نقاط الـتحكم الحـرجـة (ISO 22000) في عمليـات التصنيع وتقديم الغذاء و الخطوات العامة لتطبيقه.
